Layered yogurt parfait with lightly macerated berries and large crisp oat, almond, and seed granola clusters.

Ingredients

  • 2 cups old-fashioned rolled oats
  • 1/2 cup sliced almonds
  • 1/4 cup pumpkin seeds
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon kosher salt, divided
  • 5 tablespoons maple syrup, divided
  • 3 tablespoons neutral oil
  • 3 cups full-fat plain Greek yogurt
  • 1 teaspoon vanilla extract
  • 2 cups mixed berries, halved as needed
  • 1 teaspoon fresh lemon juice

Instructions

  1. Heat oven to 325°F. Mix oats, almonds, pumpkin seeds, cinnamon, half the salt, 1/4 cup maple syrup, and oil. Press firmly into an even layer on a .

  2. Bake without stirring for 15 minutes, rotate the pan, and bake until golden and dry at the edges, 8 to 12 minutes more. Cool completely on the pan before breaking into clusters.

  3. Toss berries with lemon juice and 1 tablespoon maple syrup; rest 10 minutes only. Stir yogurt with vanilla and remaining salt.

  4. For each parfait, layer yogurt, berries with only a little released juice, and granola; repeat once.

  5. Finish with the largest granola clusters and serve immediately. For make-ahead portions, package granola separately and add at service.
