Golden blueberry pancakes with whole berries distributed through the tender centers and a few fresh blueberries alongside.

  • Preheat a 9-inch metal cake pan; the crust will be lighter but still valid.

Ingredients

  • 2 cups (240 g) all-purpose flour
  • 3 tablespoons granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 3/4 teaspoon kosher salt
  • 1 3/4 cups buttermilk
  • 2 large eggs
  • 3 tablespoons unsalted butter, melted
  • 1 teaspoon finely grated lemon zest
  • 1 1/2 cups fresh blueberries or frozen blueberries kept frozen
  • Butter for the griddle

Instructions

  1. Whisk flour, sugar, baking powder, baking soda, and salt. In another bowl whisk buttermilk, eggs, butter, and lemon zest.

  2. Fold wet into dry just until streaky and rest 5 minutes; do not stir the berries into the bowl.

  3. Heat and lightly butter a . Scoop 1/3 cup batter for each pancake and immediately scatter about 1 tablespoon blueberries over its surface.

  4. Cook until bubbles hold open and the underside is brown, then flip once and cook until the center springs back, 1 to 2 minutes more.

  5. If using frozen berries, keep them frozen until scattering so their juice does not tint and thin the batter.
