One-pan chicken fajitas
Lime-marinated chicken thighs, poblano, bell peppers, and onions roasted hard on one preheated sheet pan and briefly broiled for skillet-like char.

- A similarly sized 13 × 18-inch rimmed pan works; smaller pans make a thicker pizza.
Ingredients

- 2 pounds boneless skinless chicken thighs, sliced into 1/2-inch strips
- 2 red bell peppers, cut into 1/2-inch strips
- 1 poblano chile, cut into 1/2-inch strips
- 1 large yellow onion, cut into 1/2-inch wedges
- 3 tablespoons neutral oil
- 3 tablespoons fresh lime juice, divided
- 2 teaspoons kosher salt
- 2 teaspoons ground cumin
- 1 teaspoon ancho chile powder
- 1 teaspoon smoked paprika
- 1 teaspoon dried Mexican oregano
- 3 garlic cloves, finely grated
- 12 warm flour tortillas
- 1 cup pico de gallo
- 1 avocado, sliced
Instructions
Put a in the oven and heat to 475°F. Toss chicken with 2 tablespoons oil, 2 tablespoons lime juice, salt, cumin, ancho, paprika, oregano, and garlic; marinate 30 minutes.
Toss peppers and onion with remaining oil. Carefully spread chicken in one layer on the hot pan, leaving gaps, and roast 7 minutes.
Flip chicken, add vegetables around it without piling, and roast until chicken reaches 165°F and vegetables have browned edges, 8 to 10 minutes.
Switch to broil and cook 1 to 3 watched minutes for char. Immediately add remaining lime juice and scrape browned juices through chicken and peppers.
Rest 5 minutes and serve from the pan with warm flour tortillas, pico de gallo, and avocado.
