Ingredients

  • 4 pounds boneless pork shoulder, partially frozen and sliced 1/8 inch thick
  • 8 dried guajillo chiles, stemmed and seeded
  • 2 dried ancho chiles, stemmed and seeded
  • 3 garlic cloves
  • 2 ounces achiote paste
  • 1/3 cup apple cider vinegar
  • 1/2 cup fresh orange juice
  • 2 teaspoons kosher salt
  • 1 teaspoon Mexican oregano
  • 1 teaspoon ground cumin
  • 1/4 teaspoon ground cloves
  • 1 small white onion, halved
  • 1 small ripe pineapple, peeled and cut into 1/2-inch slabs
  • 24 small corn tortillas, warmed
  • 1 cup finely diced white onion
  • 1 cup chopped cilantro
  • 4 limes, cut into wedges
  • 1 cup salsa taquera

Instructions

  1. Toast guajillo and ancho chiles briefly without blackening, cover with hot water 20 minutes, then drain. Blend with garlic, achiote, vinegar, orange juice, salt, oregano, cumin, cloves, and one onion half until smooth; strain.

  2. Coat thin pork with adobo and refrigerate 4 to 6 hours. Heat oven to 450°F. Set the remaining onion half cut-side down in the center of a foil-lined pan and drive vertically into it.

  3. Stack pork slices tightly and evenly on the skewers, rotating their orientation; trim overhangs and cap with one pineapple slab. Roast until the center reaches at least 145°F, 45 to 60 minutes, rotating the pan for even color.

  4. Rest the stack 5 minutes. Broil pineapple slabs separately until charred. Shave the browned outer pork thinly, spread the shavings on the pan, and broil 2 to 4 watched minutes until crisp-edged; never serve undercooked inner slices.

  5. Arrange pork and chopped charred pineapple on a platter with tortillas, diced onion, cilantro, lime, and salsa so diners can build small tacos immediately.
