Ingredients

  • 2 pounds boneless skinless chicken thighs
  • 2 teaspoons kosher salt, divided
  • 5 cups low-sodium chicken stock, divided
  • 8 dried guajillo chiles, stemmed and seeded
  • 3 dried ancho chiles, stemmed and seeded
  • 3 garlic cloves
  • 1/4 white onion
  • 1 teaspoon Mexican oregano
  • 1/2 teaspoon ground cumin
  • 3 tablespoons neutral oil, divided
  • 12 fresh 6-inch corn tortillas
  • 6 ounces queso fresco, crumbled
  • 1/2 cup Mexican crema
  • 1/2 small white onion, thinly sliced
  • 1/2 cup cilantro leaves

Instructions

  1. Simmer chicken gently with 1 teaspoon salt and 3 cups stock until it reaches 175°F and shreds easily, 20 to 25 minutes. Rest in broth 10 minutes, shred, and moisten with 1/2 cup broth.

  2. Toast guajillo and ancho chiles briefly in a dry pan without blackening. Cover with remaining 2 cups hot stock for 20 minutes, then with garlic, onion quarter, oregano, cumin, and remaining salt until completely smooth. Strain.

  3. Heat 1 tablespoon oil in a saucepan. Carefully add chile purée and fry, stirring, until darkened and thick enough to coat a spoon, 10 to 12 minutes. Adjust with reserved chicken broth if necessary.

  4. Heat oven to 350°F. Heat remaining oil in a skillet and pass each tortilla through it for about 5 seconds per side—pliable, not crisp. Dip in warm red sauce, add chicken, roll, and place seam-side down in a lightly sauced dish.

  5. Spoon over only enough sauce to keep the tortillas moist and warm in the oven 8 to 10 minutes. Serve immediately with queso fresco, crema, sliced onion, and cilantro.
