Huachinango a la talla
Butterflied whole red snapper grilled over fire, one half lacquered with guajillo adobo and the other with parsley-garlic green sauce, for tortillas and black beans.

Ingredients

- 1 whole red snapper, 3 1/2 to 4 pounds, scaled, gutted, and butterflied
- 2 teaspoons kosher salt, divided
- 3 tablespoons fresh lime juice, divided
- 6 dried guajillo chiles, stemmed and seeded
- 2 dried árbol chiles, stemmed
- 4 garlic cloves, divided
- 1/4 white onion
- 2 tablespoons apple cider vinegar
- 1 teaspoon dried Mexican oregano
- 1/2 cup neutral oil, divided
- 2 packed cups flat-leaf parsley
- 1 serrano chile
- 1/2 teaspoon ground cumin
- 18 warm corn tortillas
- 3 cups warm black beans
- 1 cup pickled red onions
Instructions
Score the thickest flesh shallowly, season with 1 1/2 teaspoons salt and 2 tablespoons lime juice, and refrigerate 30 minutes. Soak a if wooden-handled.
Toast guajillo and árbol chiles briefly without blackening and soak 15 minutes. Blend with 2 garlic cloves, onion, vinegar, oregano, remaining salt, and 1/4 cup oil; strain. Blend parsley, serrano, remaining garlic, cumin, remaining lime, and remaining oil separately.
Prepare a clean, well-oiled grill for medium-high direct heat with a cooler zone. Secure fish skin-side down in the basket and grill mostly over the cooler edge, covered, until skin releases and browns, 8 to 10 minutes.
Turn carefully. Brush one flesh half repeatedly with red adobo and the other with green sauce; grill and turn as needed until the thickest flesh reaches 145°F and flakes from the backbone, 8 to 12 minutes more.
Rest 5 minutes. Present whole, then lift portions from the bones and serve with tortillas, beans, and pickled onion.
