Camarones a la diabla
Large shrimp flash-seared and finished in a fried tomato sauce layered with guajillo, árbol, and smoky chipotle chiles.

Ingredients

- 2 pounds large raw shrimp, peeled and deveined
- 1 tablespoon fresh lime juice
- 1 1/2 teaspoons kosher salt, divided
- 4 dried guajillo chiles, stemmed and seeded
- 4 dried árbol chiles, divided
- 3 Roma tomatoes, halved
- 1/2 white onion, divided
- 3 garlic cloves
- 2 chipotle chiles in adobo
- 1/2 teaspoon dried Mexican oregano
- 3 tablespoons olive oil, divided
- 1/2 cup water or shrimp stock
- 1/2 cup chopped cilantro
- 3 cups cooked white rice
- 12 warm corn tortillas
Instructions
Toss shrimp with lime and 1/2 teaspoon salt; refrigerate 15 minutes. Toast guajillos and 2 árbol chiles briefly without blackening, then soak in hot water 15 minutes.
Broil tomatoes, one onion quarter, and garlic until spotted. Blend with drained chiles, chipotles, oregano, remaining salt, and water; strain.
Heat 1 tablespoon oil in a . Pat shrimp dry and sear in one layer, about 45 seconds per side—still underdone inside. Transfer immediately.
Cook diced remaining onion in remaining oil for 3 minutes. Add sauce carefully and fry until darker, glossy, and no longer raw-tasting, 8 to 10 minutes.
Return shrimp and simmer only until opaque, loose-C shaped, and 145°F, 1 to 2 minutes. Add remaining árbol only if desired; scatter with cilantro and serve with rice and tortillas.
