Tall vanilla birthday cake with fine pale crumb, fluffy chocolate frosting, and rainbow sprinkles.

  • 2 3/4 cups (330 grams) cake flour
  • 1 2/3 cups (333 grams) granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon fine sea salt
  • 3/4 cup (170 grams) unsalted butter, softened
  • 1/4 cup (50 grams) neutral oil
  • 1 cup (240 grams) buttermilk, room temperature, divided
  • 2 large eggs plus 2 large egg whites, room temperature
  • 1 tablespoon vanilla extract
  • 1 cup (226 grams) unsalted butter, softened, for frosting
  • 3 1/2 cups (420 grams) confectioners' sugar
  • 3/4 cup (64 grams) Dutch-process cocoa powder
  • 1/2 cup (120 grams) heavy cream, as needed
  • Pinch of fine sea salt, for frosting
  • 1/3 cup rainbow sprinkles

Instructions

  1. Heat oven to 350°F. Grease , line bottoms with parchment, and grease again. In a mixer bowl combine cake flour, sugar, baking powder, baking soda, and 1 teaspoon salt. Beat in the 3/4 cup butter and oil on low until the mixture resembles damp sand.

  2. Add 3/4 cup buttermilk and beat 90 seconds on medium. Whisk remaining 1/4 cup buttermilk with eggs, whites, and vanilla; add in three portions on low, scraping well. Divide evenly and bake 25 to 32 minutes until lightly golden and springy with moist crumbs. Cool fully.

  3. Beat the 1 cup butter until creamy. On low add confectioners' sugar, cocoa, and the pinch of salt, then enough cream for a soft spreadable frosting. Beat 2 minutes until fluffy. Level cake domes only if necessary.

  4. Fill, stack, crumb-coat, and chill the cake 20 minutes. Finish the top and sides with remaining frosting and press sprinkles around the edge or scatter over the top. This is the batch's one true project: two-layer reverse-creamed cake, frosting, leveling, stacking, coating, chilling, and decorating form one celebration bake.

  5. Let stand 20 minutes before cutting. Keep covered at cool room temperature for 2 days or refrigerate longer, returning to room temperature before serving. For a simpler birthday, bake the same batter in a 9-by-13-inch pan for about 35 minutes and spread frosting only on top.
