Fudgy chocolate brownies
Deep chocolate brownies with shiny crackled tops, chewy edges, and dense fudgy centers.

Ingredients

- 10 tablespoons (142 grams) unsalted butter
- 1 1/4 cups (250 grams) granulated sugar
- 3/4 cup (64 grams) Dutch-process cocoa powder
- 1/2 teaspoon fine sea salt
- 1 teaspoon espresso powder, optional
- 2 teaspoons vanilla extract
- 2 large eggs plus 1 large egg yolk
- 3/4 cup (90 grams) all-purpose flour
- 3/4 cup (128 grams) semisweet chocolate chips
- Neutral oil or softened butter, for the pan
Instructions
Heat oven to 350°F. Lightly grease an , line with a parchment sling, and grease the parchment. Melt butter in a saucepan over low heat.
Add sugar and whisk over low heat 1 to 2 minutes until hot and glossy but not bubbling. Remove from heat and whisk in cocoa, salt, optional espresso powder, and vanilla. Cool 5 minutes so the eggs will not scramble.
Whisk in eggs and yolk one at a time, beating vigorously for 30 seconds after each until the batter is thick and shiny. Fold in flour only until nearly combined, then fold in chocolate chips.
Spread evenly in the pan and bake 26 to 32 minutes until the top is crackled, edges are set, and a toothpick 2 inches from the edge shows moist crumbs but no liquid batter. The center should reach about 205°F; do not wait for a clean toothpick.
Cool completely in the pan for at least 90 minutes. Lift by the parchment and cut with a warm dry knife, wiping between cuts. Cooling is part of the recipe: warm brownies taste good but have not yet set into clean fudgy squares.
