Filipino tosilog with caramelized red tocino, garlic fried rice, fried egg, tomato, and spiced vinegar.

Equipment

  • Preheat a 9-inch metal cake pan; the crust will be lighter but still valid.

Ingredients

  • 1 1/2 pounds pork shoulder, sliced 1/4 inch thick
  • 1/3 cup pineapple juice
  • 1/4 cup brown sugar
  • 2 tablespoons soy sauce
  • 5 garlic cloves, grated and divided
  • 1 teaspoon kosher salt
  • 1/2 teaspoon annatto powder
  • 1/4 teaspoon black pepper
  • 1 cup water
  • 3 tablespoons neutral oil, divided
  • 4 cups cold cooked jasmine rice
  • 4 large eggs
  • 2 ripe tomatoes, sliced
  • 1/3 cup cane vinegar
  • 1 Thai chile, sliced

Instructions

  1. Mix pork with pineapple juice, brown sugar, soy, half the garlic, salt, annatto, and pepper. Cover and refrigerate 12 to 24 hours.

  2. Put pork and marinade in a with 1 cup water. Simmer uncovered until pork is tender and water has evaporated, 15 to 20 minutes.

  3. Add 1 tablespoon oil and fry pork over medium, turning often, until glazed, caramelized, and 145°F inside; reduce heat before the sugar scorches.

  4. In another skillet, fry remaining garlic in 1 tablespoon oil until pale gold. Add cold rice, break up clumps, season lightly, and fry until hot. Fry eggs in remaining oil to preferred doneness.

  5. Mix vinegar and chile. Serve tocino with garlic rice, eggs, tomato, and spiced vinegar.
