Filipino longsilog with browned skinless longganisa, garlic rice, fried egg, tomato, and spiced vinegar.

  • Preheat a 9-inch metal cake pan; the crust will be lighter but still valid.

Ingredients

  • 1 pound ground pork, 20 percent fat
  • 6 garlic cloves, grated and divided
  • 2 tablespoons brown sugar
  • 1 tablespoon cane vinegar, plus 1/3 cup for serving
  • 1 tablespoon soy sauce
  • 1 teaspoon kosher salt
  • 1 teaspoon sweet paprika
  • 1/2 teaspoon black pepper
  • 2 tablespoons neutral oil, divided
  • 1/2 cup water
  • 4 cups cold cooked jasmine rice
  • 4 large eggs
  • 2 tomatoes, sliced
  • 1 Thai chile, sliced

Instructions

  1. Mix pork vigorously with half the garlic, sugar, 1 tablespoon vinegar, soy, salt, paprika, and pepper until tacky. Cover and refrigerate at least 8 hours.

  2. With oiled hands shape into twelve short skinless links. Put links and water in a , cover, and simmer gently until the centers reach 150°F, about 8 minutes.

  3. Uncover and let water evaporate. Add 1 tablespoon oil and brown links carefully on all sides until they reach 160°F.

  4. Fry remaining garlic in 1/2 tablespoon oil until pale gold. Add cold rice, separate the grains, and fry until hot. Use remaining oil to fry eggs.

  5. Mix 1/3 cup vinegar with chile. Serve longganisa with garlic rice, eggs, tomato, and spiced vinegar.
