Swiss Bircher muesli with soaked oats, freshly grated apple, berries, and toasted hazelnuts.

Ingredients

  • 2 cups old-fashioned rolled oats
  • 1 1/2 cups whole milk
  • 1 cup plain whole-milk yogurt
  • 2 crisp tart apples
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon honey, plus more if needed
  • 1/2 cup hazelnuts
  • Pinch of kosher salt
  • 1/2 cup fresh berries, for serving

Instructions

  1. Stir oats, milk, yogurt, lemon juice, honey, and salt in a . Refrigerate at least 6 hours or overnight.

  2. Toast hazelnuts in a dry skillet over medium until fragrant, 4 to 5 minutes. Cool, rub away loose skins in a towel, and chop.

  3. Just before serving, grate one apple, including its skin, on the large holes of a box grater directly into the soaked oats and fold through immediately.

  4. Thin with a little milk if the mixture no longer falls easily from a spoon. Taste and add honey only if the apples require it.

  5. Divide among bowls. Thinly slice the remaining apple and add it with berries and toasted hazelnuts.
