Greek spanakopita dinner pie with deeply golden flaky phyllo and a dry spinach, feta, herb, and leek filling cut into squares.

Ingredients

  • 3 packages frozen chopped spinach, 10 ounces each, thawed
  • 1 teaspoon kosher salt, divided
  • 2 tablespoons extra-virgin olive oil, plus 1/2 cup for phyllo
  • 1 large leek, white and light-green parts finely chopped and rinsed
  • 6 scallions, thinly sliced
  • 3 garlic cloves, minced
  • 1 cup chopped fresh dill
  • 1/2 cup chopped flat-leaf parsley
  • 1 lemon, 1 teaspoon zest finely grated and remaining lemon cut in wedges
  • 1/2 teaspoon black pepper
  • 12 ounces feta, crumbled
  • 1 cup whole-milk ricotta, drained
  • 3 pasteurized large eggs, beaten
  • 16 sheets frozen phyllo dough, thawed overnight in the refrigerator

Instructions

  1. Squeeze thawed spinach by handfuls until no more liquid drips, then loosen it. Cook leek and scallions in 2 tablespoons oil with 1/2 teaspoon salt for 7 minutes; add garlic for 30 seconds and cool.

  2. Mix spinach, leek mixture, dill, parsley, lemon zest, pepper, feta, ricotta, eggs, and remaining salt. The filling should hold together without pooling liquid.

  3. Keep phyllo under a barely damp towel. Brush a with oil; layer eight sheets, brushing each lightly and letting edges climb the pan. Spread filling evenly without compressing it.

  4. Top with eight more lightly oiled sheets, tuck edges, and score only the top layers into eight squares. Bake at 375°F for 45 to 50 minutes until deeply golden, audibly crisp, and 160°F in the center.

  5. Rest uncovered 15 minutes so steam escapes instead of softening phyllo. Cut through the score lines and serve with tomato-cucumber salad or lemon wedges.
