Chicken souvlaki plates
Lemon-oregano chicken skewers with cool homemade tzatziki, warm pita, tomatoes, cucumber, red onion, and feta.

Ingredients

- 1 3/4 pounds boneless skinless chicken thighs, cut in 1 1/2-inch pieces
- 1/4 cup extra-virgin olive oil, divided
- 2 lemons, zested and juiced, divided
- 4 garlic cloves, finely grated and divided
- 2 teaspoons dried Greek oregano
- 1 1/2 teaspoons kosher salt, divided
- 1/2 teaspoon black pepper
- 1 cup plain whole-milk Greek yogurt
- 1 English cucumber, half coarsely grated and half thinly sliced
- 2 tablespoons chopped fresh dill
- 4 pocketless Greek pitas
- 2 ripe tomatoes, cut in wedges
- 1/2 small red onion, very thinly sliced
- 4 ounces feta, crumbled
- 8 metal or soaked wooden skewers
Instructions
Whisk 3 tablespoons olive oil with half the lemon zest and juice, 3 garlic cloves, oregano, 1 teaspoon salt, and pepper. Coat chicken and refrigerate 30 minutes to 4 hours; longer acid exposure can make the surface mealy.
Toss grated cucumber with remaining salt in a sieve for 10 minutes, then squeeze very dry. Stir into yogurt with dill, remaining garlic, 1 tablespoon lemon juice, and remaining olive oil; chill the tzatziki.
. Grill or broil over high heat, turning every 3 minutes, until lightly charred and every skewer reaches 165°F, 10 to 12 minutes total.
Warm pitas briefly on the grill or under the broiler. Toss tomatoes and red onion with the remaining lemon juice and zest so the fresh side needs no separate bottled dressing.
Build four plates with chicken skewers, tzatziki, warm pita, tomato-onion salad, cucumber from the remaining English cucumber half, and feta. Let diners slide the meat into pita or eat it as a composed plate.
