Ingredients

  • 2 slices day-old country bread, crusts removed and torn
  • 3/4 cup dry red wine, divided
  • 1 1/2 pounds 85-percent-lean ground beef
  • 5 garlic cloves, finely grated and divided
  • 2 teaspoons ground cumin, divided
  • 1 1/2 teaspoons kosher salt, divided
  • 1/2 teaspoon black pepper, divided
  • 1 pasteurized large egg
  • 3 tablespoons extra-virgin olive oil, divided
  • 1 small yellow onion, finely chopped
  • 2 tablespoons tomato paste
  • 1 can crushed tomatoes, 28 ounces
  • 1 cinnamon stick
  • 1 bay leaf
  • 1 teaspoon honey
  • 1/2 cup water
  • 3 tablespoons chopped flat-leaf parsley
  • 4 1/2 cups cooked white rice, for serving

Instructions

  1. Soak bread in 1/4 cup wine for 10 minutes, then squeeze lightly. Mix gently with beef, 3 garlic cloves, 1 1/2 teaspoons cumin, 1 teaspoon salt, 1/4 teaspoon pepper, egg, and 1 tablespoon oil; chill 15 minutes.

  2. Shape 18 compact oblong meatballs with damp hands. Arrange on an oiled and bake at 425°F for 12 to 15 minutes until browned and at least 160°F; do not cook until hard.

  3. Meanwhile heat remaining oil in a wide saucepan. Cook onion 6 minutes, add remaining garlic, cumin, and tomato paste for 1 minute, then remaining wine; reduce by half.

  4. Add crushed tomatoes, cinnamon, bay, honey, water, remaining salt, and pepper. Simmer uncovered 15 minutes until the sauce loses its raw edge but remains loose enough to coat meatballs.

  5. Nestle baked meatballs into sauce and simmer gently 10 minutes, turning once, until the center reaches 165°F and sauce is thick. Discard cinnamon and bay, add parsley, and serve over rice.
