Snickerdoodles
Soft, tangy sugar cookies with crackled cinnamon crusts and chewy centers.

- A similarly sized 13 × 18-inch rimmed pan works; smaller pans make a thicker pizza.
Ingredients

- 2 3/4 cups (330 grams) all-purpose flour
- 2 teaspoons cream of tartar
- 1 teaspoon baking soda
- 1/2 teaspoon fine sea salt
- 3/4 cup (170 grams) unsalted butter, softened
- 1 1/4 cups (250 grams) granulated sugar
- 1/4 cup (50 grams) packed light brown sugar
- 1 large egg plus 1 large egg yolk
- 2 teaspoons vanilla extract
- 1/4 cup (50 grams) granulated sugar, for rolling
- 1 tablespoon ground cinnamon
Instructions
Whisk flour, cream of tartar, baking soda, and salt. Beat butter, 1 1/4 cups granulated sugar, and brown sugar for 2 minutes until creamy. Beat in egg, yolk, and vanilla.
Mix in dry ingredients only until combined. Chill 30 minutes. Heat oven to 375°F and . Stir rolling sugar and cinnamon in a shallow bowl.
Roll 1 1/2-tablespoon portions into balls, coat generously in cinnamon sugar, and set 2 1/2 inches apart. Bake one pan at a time 8 to 11 minutes until puffed and crackled with set edges but very soft centers.
Cool 8 minutes on the pan as the cookies settle and wrinkle, then move to a rack. Store airtight when fully cool; freeze coated dough balls and bake from frozen with 1 to 2 extra minutes.
