Shakshuka

Shakshuka with six eggs in red pepper and tomato sauce, finished with herbs and crumbled feta.

Equipment

  • Preheat a 9-inch metal cake pan; the crust will be lighter but still valid.

Ingredients

  • 2 tablespoons extra-virgin olive oil
  • 1 yellow onion, diced
  • 1 red bell pepper, diced
  • 3 garlic cloves, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon sweet paprika
  • 1/4 teaspoon cayenne
  • 1 can (28 ounces) whole peeled tomatoes, crushed by hand
  • 3/4 teaspoon kosher salt
  • 6 large eggs
  • 1/3 cup crumbled feta, optional
  • 1/4 cup chopped parsley or cilantro
  • Warm flatbread, for serving

Instructions

  1. Heat oil in a over medium. Cook onion and bell pepper with a pinch of salt until very soft and lightly browned, 10 to 12 minutes.

  2. Add garlic, cumin, paprika, and cayenne; stir until fragrant, 30 seconds. Add tomatoes and remaining salt.

  3. Simmer uncovered until thick enough that a spoon drawn through leaves a path for several seconds, 12 to 15 minutes. Taste before adding eggs.

  4. Make six shallow wells and crack in eggs. Cover and cook over low heat until whites are just set but yolks remain soft, 5 to 8 minutes.

  5. Remove from heat promptly, scatter with optional feta and herbs, and serve in shallow bowls with flatbread.
