Roasted pork bánh mì with crackly light baguette, thin five-spice pork, pâté, mayonnaise, daikon-carrot pickle, cucumber, cilantro, and jalapeño.

Ingredients

  • 1 1/2 pounds center-cut pork loin
  • 2 tablespoons fish sauce
  • 1 tablespoon light brown sugar
  • 1 tablespoon neutral oil
  • 2 garlic cloves, finely grated
  • 1 teaspoon finely grated fresh ginger
  • 1/2 teaspoon Chinese five-spice powder
  • 1/2 teaspoon black pepper
  • 1 cup julienned daikon
  • 1 cup julienned carrot
  • 1/3 cup unseasoned rice vinegar
  • 2 tablespoons granulated sugar
  • 1 teaspoon kosher salt
  • 4 light, crisp Vietnamese baguettes or airy French rolls, 7 to 8 inches each
  • 1/3 cup mayonnaise
  • 4 ounces smooth pork pâté
  • 1 English cucumber, cut into thin lengthwise batons
  • 1 packed cup cilantro sprigs
  • 1 jalapeño, thinly sliced
  • 2 teaspoons Maggi seasoning or light soy sauce

Instructions

  1. Whisk fish sauce, brown sugar, oil, garlic, ginger, five-spice, and pepper. Coat pork and refrigerate 2 hours. Meanwhile, toss daikon and carrot with rice vinegar, granulated sugar, and salt; pickle 30 minutes, then drain and squeeze gently.

  2. Roast pork on a until browned and 145°F at the center, 20 to 24 minutes. Rest 10 minutes, then slice very thinly across the grain.

  3. Warm baguettes for 3 minutes so their shells crackle. Split through one side, leaving a hinge, and pull only loose excess crumb from the center.

  4. Spread mayonnaise over the upper cut faces and pâté over the lower faces. Divide warm pork, drained pickle, cucumber, cilantro, and jalapeño evenly among the loaves.

  5. Drizzle each filling with 1/2 teaspoon Maggi seasoning, close, and serve immediately while the bread is crisp and the herbs remain cool.
