Bò kho breakfast with baguette
Fragrant Vietnamese beef and carrot stew with lemongrass, star anise, tomato, and a crisp baguette for dipping.

Equipment
- Use a hot sheet pan under an inverted oven-safe metal bowl for the covered phase.
Ingredients

- 2 1/2 pounds beef chuck, cut in 1 1/2-inch pieces
- 2 tablespoons fish sauce
- 1 tablespoon brown sugar
- 1 tablespoon grated ginger
- 4 garlic cloves, grated
- 2 tablespoons Vietnamese bò kho seasoning
- 2 tablespoons neutral oil
- 2 stalks lemongrass, bruised and cut in lengths
- 2 star anise pods
- 1 cinnamon stick
- 2 tablespoons tomato paste
- 1 can (14 ounces) crushed tomatoes
- 5 cups low-sodium beef stock
- 1 pound carrots, cut in large pieces
- 1 tablespoon kosher salt, plus more to taste
- 6 small crisp baguettes
- Thai basil, cilantro, lime, and sliced onion, for serving
Instructions
Mix beef with fish sauce, sugar, ginger, garlic, and bò kho seasoning; refrigerate 1 hour.
Heat oil in a over medium-high. Brown beef in uncrowded batches and reserve.
Lower heat and toast lemongrass, star anise, and cinnamon 1 minute. Cook tomato paste until brick-red, then add crushed tomatoes, stock, beef, and salt.
Bring to a simmer, cover partially, and cook until beef is nearly tender, about 90 minutes. Add carrots and simmer uncovered until both beef and carrots are tender and broth lightly coats a spoon, 35 to 45 minutes.
Remove whole aromatics and skim excess fat. Taste for fish sauce and salt, then serve in bowls with warmed crisp baguettes, herbs, lime, and onion.
