Psari plaki (Greek tomato-baked fish)
White fish baked over silky onions, peppers, garlic, tomatoes, white wine, olives, oregano, parsley, and lemon in one saucy skillet.

Ingredients

- 4 thick skinless cod, haddock, or halibut fillets, about 6 ounces each
- 1 1/4 teaspoons kosher salt, divided
- 1/2 teaspoon black pepper, divided
- 3 tablespoons extra-virgin olive oil, divided
- 1 large yellow onion, thinly sliced
- 1 red bell pepper, thinly sliced
- 4 garlic cloves, thinly sliced
- 1 tablespoon tomato paste
- 1/2 cup dry white wine
- 1 can crushed tomatoes, 14 ounces
- 1 teaspoon dried oregano
- 1/2 cup pitted Kalamata olives
- 1 tablespoon capers, rinsed
- 1 lemon, half juiced and half cut in wedges
- 1/4 cup chopped flat-leaf parsley
Instructions
Pat fish dry and season with 1/2 teaspoon salt and 1/4 teaspoon pepper. Refrigerate while beginning the sauce so the vegetables can soften without overcooking the fish.
Heat 2 tablespoons oil in a . Cook onion, bell pepper, remaining salt, and pepper for 10 minutes until soft and lightly golden; add garlic and tomato paste for 1 minute.
Add wine, scrape the skillet, and reduce by half. Stir in crushed tomatoes and oregano and simmer 8 minutes until the sauce is concentrated but still loose; fold in olives and capers.
Nestle fish into the sauce, drizzle with remaining oil, and bake at 400°F for 10 to 15 minutes depending on thickness, until opaque, easily flaked, and 145°F in the center.
Squeeze half the lemon over the skillet and scatter parsley. Serve with the lemon wedges and bread, rice, or potatoes for the tomato-onion juices.
