Ingredients

  • 1 1/2 cups (180 grams) all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon fine sea salt
  • 1/2 cup (113 grams) unsalted butter, softened
  • 3/4 cup (190 grams) conventional creamy peanut butter
  • 3/4 cup (150 grams) packed light brown sugar
  • 1/4 cup (50 grams) granulated sugar, plus 2 tablespoons for rolling
  • 1 large egg
  • 1 teaspoon vanilla extract

Instructions

  1. Whisk flour, baking soda, baking powder, and salt. Beat butter, peanut butter, brown sugar, and 1/4 cup granulated sugar for 2 minutes until creamy. Beat in egg and vanilla.

  2. Mix in dry ingredients on low only until combined. If the dough feels very soft, chill 20 to 30 minutes; do not add flour. Heat oven to 350°F and line with parchment.

  3. Roll level 1 1/2-tablespoon portions in the remaining sugar and place 2 inches apart. Press twice with a fork to make a shallow crosshatch and flatten each to about 1/2 inch thick.

  4. Bake one pan at a time for 10 to 13 minutes until edges are set and lightly golden while centers look soft. Cool 10 minutes on the pan before moving to a rack; the fragile warm cookies firm as they stand.
