Oatmeal raisin cookies
Chewy cinnamon-oat cookies with plump raisins, caramel edges, and a soft hearty center.

- A similarly sized 13 × 18-inch rimmed pan works; smaller pans make a thicker pizza.
Ingredients

- 1 cup (150 grams) raisins
- 1 cup (120 grams) all-purpose flour
- 1/2 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon fine sea salt
- 1/2 cup (113 grams) unsalted butter, softened
- 3/4 cup (150 grams) packed dark brown sugar
- 1/4 cup (50 grams) granulated sugar
- 1 large egg
- 2 teaspoons vanilla extract
- 1 1/2 cups (150 grams) old-fashioned rolled oats
Instructions
Cover raisins with hot water for 10 minutes, then drain and blot very dry. Whisk flour, baking soda, cinnamon, and salt. Beat butter and both sugars for 2 minutes, then beat in egg and vanilla.
Mix in dry ingredients just until combined, then fold in oats and raisins. Chill 30 minutes so the oats hydrate and the cookies spread predictably. Heat oven to 350°F and .
Scoop 2-tablespoon portions 2 1/2 inches apart and press thick mounds slightly. Bake one pan at a time 10 to 13 minutes until edges are golden and centers still look soft.
Cool on the pan 10 minutes, then move to a rack. Store airtight only when fully cool; a piece of parchment between layers prevents the moist cookies from sticking.
