Ingredients

  • 2 cups (240 grams) all-purpose flour
  • 3/4 cup (64 grams) Dutch-process cocoa powder
  • 1 3/4 cups (350 grams) granulated sugar
  • 2 teaspoons baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon fine sea salt
  • 2 large eggs, room temperature
  • 1 cup (240 grams) buttermilk, room temperature
  • 1/2 cup (100 grams) neutral oil
  • 2 teaspoons vanilla extract
  • 1 cup (240 grams) hot coffee or hot water
  • 1 cup (226 grams) unsalted butter, softened
  • 3 1/2 cups (420 grams) confectioners' sugar
  • 2/3 cup (57 grams) Dutch-process cocoa powder, for frosting
  • 1/2 cup (120 grams) heavy cream, as needed
  • Pinch of fine sea salt, for frosting

Instructions

  1. Heat oven to 350°F. Grease , line bottoms with parchment, and grease again. Whisk flour, 3/4 cup cocoa, granulated sugar, baking soda, baking powder, and 1 teaspoon salt until no cocoa lumps remain.

  2. Whisk in eggs, buttermilk, oil, and vanilla, then slowly whisk in hot coffee; the batter will be thin. Divide evenly between pans and bake 27 to 34 minutes until the tops spring back and a tester shows moist crumbs. Cool 15 minutes in pans, then turn onto racks and cool completely.

  3. For frosting, beat softened butter until creamy. On low, add confectioners' sugar, 2/3 cup cocoa, and the pinch of salt. Beat in cream a tablespoon at a time until spreadable, then beat 2 minutes until lighter; avoid making it so loose that the layers slide.

  4. Set one level cake layer on a plate and spread with about 1 cup frosting. Add the second layer upside down for a flat top. Apply a thin crumb coat, chill 15 minutes, then cover top and sides with remaining frosting. Let stand 20 minutes before slicing.

  5. Store covered at cool room temperature up to 2 days or refrigerate longer; return slices to room temperature before serving so buttercream and crumb soften. If making ahead, wrap unfrosted cool layers airtight and freeze rather than refrigerating them uncovered.
