Singaporean kaya toast fingers with cold butter and pandan kaya beside soft eggs seasoned with dark soy and white pepper.

Equipment

  • Any lidded pot of at least two quarts works; a very large pot loses heat faster.

Ingredients

  • 1 cup full-fat coconut milk
  • 4 pandan leaves, knotted
  • 4 pasteurized large eggs for kaya
  • 3/4 cup granulated sugar
  • 1/4 teaspoon kosher salt
  • 8 pasteurized large eggs for serving, at room temperature
  • 8 thin slices white sandwich bread
  • 4 tablespoons cold salted butter, thinly sliced
  • Dark soy sauce and ground white pepper, for serving

Instructions

  1. Warm coconut milk with pandan just until steaming; cover, steep 20 minutes, squeeze leaves gently, and discard.

  2. Whisk 4 pasteurized eggs with sugar and salt, then whisk in coconut milk. Cook in a bowl over , stirring constantly, until smooth, thick, and 160°F, 20 to 25 minutes; strain and cool.

  3. For soft eggs, lower 8 pasteurized room-temperature eggs into boiling water, cover, remove from heat, and stand 7 minutes. Transfer briefly to cool water so shells can be handled.

  4. Toast bread until dry and crisp, trim crusts if desired, and sandwich a thin spread of kaya with cold butter. Cut into fingers.

  5. Crack two soft eggs into each shallow bowl, season with dark soy and white pepper, and serve immediately with toast for dipping.
