Korean gyeran bap with hot rice, a crisp-edged runny egg, gim, scallion, sesame, soy, and kimchi.

Equipment

  • If you already have an 8-inch skillet, use it; the omelet will simply have softer edges.

Ingredients

  • 2 cups hot cooked Korean or Japanese medium-grain rice
  • 1 tablespoon unsalted butter
  • 2 teaspoons neutral oil
  • 2 large eggs
  • 2 teaspoons Korean soup soy sauce or light soy sauce
  • 1 teaspoon toasted sesame oil
  • 1 sheet roasted gim, crumbled
  • 1 scallion, thinly sliced
  • 1 teaspoon toasted sesame seeds
  • Kimchi, for serving

Instructions

  1. Divide hot rice between two warm bowls and loosen the grains. Have all seasonings ready before frying the eggs.

  2. Heat butter and neutral oil in a . Crack in eggs and cook until whites set with crisp edges while yolks remain runny, 2 to 3 minutes.

  3. Slide one egg onto each bowl. Drizzle each with 1 teaspoon soy sauce and 1/2 teaspoon sesame oil.

  4. Add gim, scallion, and sesame. Break the yolk and mix thoroughly into the hot rice; serve immediately with kimchi.
