Egyptian ful medames with partly mashed fava beans, olive oil, lemon, cumin, tomato, parsley, scallions, and pita.

Equipment

  • Any lidded pot of at least two quarts works; a very large pot loses heat faster.
  • Potato masher or fork

Ingredients

  • 2 cans (15 ounces each) small fava beans, with liquid
  • 2 garlic cloves, finely grated
  • 1 teaspoon ground cumin
  • 3/4 teaspoon kosher salt
  • 3 tablespoons fresh lemon juice
  • 3 tablespoons extra-virgin olive oil, plus more to finish
  • 1 ripe tomato, finely diced
  • 1/4 cup chopped parsley
  • 2 scallions, thinly sliced
  • 4 hard-boiled eggs, quartered, optional
  • Warm pita, for serving

Instructions

  1. Put beans with their liquid in a with garlic, cumin, and salt. Simmer gently until the beans are completely tender and hot, 10 to 12 minutes.

  2. Mash roughly half the beans in the pan, leaving plenty whole. Simmer until spoonable rather than soupy, adding water if it becomes stiff.

  3. Remove from heat and stir in lemon juice and olive oil. Taste for salt, acid, and cumin while warm.

  4. Spoon into a shallow bowl and make small wells across the surface. Add tomato, parsley, scallions, and optional egg.

  5. Finish with olive oil and serve immediately with pita for scooping.
