  • Preheat a 9-inch metal cake pan; the crust will be lighter but still valid.

Ingredients

  • 3 large eggs, at room temperature
  • 2/3 cup whole milk, at room temperature
  • 2/3 cup all-purpose flour
  • 1 tablespoon granulated sugar
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon kosher salt
  • 3 tablespoons unsalted butter
  • 1 lemon, cut into wedges
  • 1 cup fresh berries
  • Confectioners sugar, for serving

Instructions

  1. Heat oven to 425°F with a inside for at least 20 minutes.

  2. Blend eggs, milk, flour, sugar, vanilla, and salt until completely smooth and lightly foamy, about 30 seconds.

  3. Carefully remove the hot skillet, add butter, and swirl to coat bottom and sides. Pour batter in immediately and return to the oven.

  4. Bake without opening the door until dramatically puffed, deeply golden at the edges, and set in the center, 17 to 20 minutes.

  5. Bring the skillet directly to the table, then finish with lemon, berries, and confectioners sugar. Serve at once before the inevitable collapse.
