Black pepper beef with green beans
Black pepper beef with green beans brings together peppery beef, crisp green beans, sweet peppers, and brown rice in a colorful, weeknight-ready dinner.

- 1 1/4 pounds flank steak, thinly sliced across the grain
- 1 1/2 cups brown rice
- 10 ounces green beans, cut into 2-inch pieces
- 1 red bell pepper, thinly sliced
- 2 tablespoons low-sodium soy sauce
- 1 tablespoon rice vinegar
- 1 teaspoon coarsely ground black pepper
- 4 scallions, thinly sliced
- 2 tablespoons olive oil, divided
- 1 teaspoon kosher salt, divided, plus black pepper
Instructions
Cook 1 1/2 cups brown rice according to package directions. Keep warm, fluffing or separating it before serving. Combine 2 tablespoons low-sodium soy sauce, 1 tablespoon rice vinegar, 1 teaspoon coarsely ground black pepper into a smooth sauce.
Pat 1 1/4 pounds flank steak, thinly sliced across the grain dry, then season with half of 1 teaspoon kosher salt and black pepper. Heat 1 tablespoon olive oil in a large skillet over medium-high. Cook the main ingredient until it is browned outside and still tender; transfer to a plate.
Add the remaining 1 tablespoon olive oil and 10 ounces green beans, cut into 2-inch pieces and 1 red bell pepper, thinly sliced. Cook until crisp-tender, 4 to 6 minutes. Return the main ingredient, add the sauce, and simmer 1 to 2 minutes until glossy.
Season with the remaining salt and pepper. Divide the prepared base among four plates, add Black pepper beef with green beans. Finish with 4 scallions, thinly sliced.
