Bifana pork sandwich
A Vendas Novas–leaning Portuguese bifana: paper-thin pork loin quickly fried in garlic butter, tucked into a lightly toasted papo seco moistened with the concentrated pan juices.

Ingredients

- 1 1/2 pounds boneless pork loin, sliced across the grain into four thin cutlets
- 4 garlic cloves, finely grated
- 1 teaspoon sweet paprika
- 1 teaspoon kosher salt
- 1/4 teaspoon black pepper
- 1/2 cup dry white wine
- 1 tablespoon white-wine vinegar
- 3 tablespoons unsalted butter
- 1 tablespoon olive oil
- 4 papo secos or crusty Portuguese rolls
- 4 teaspoons yellow mustard
- Portuguese piri-piri sauce, for serving
Instructions
Pound pork between parchment to an even 1/8 inch. Mix garlic, paprika, salt, pepper, wine, and vinegar; coat the pork and refrigerate 1 hour. Lift pork from marinade and pat the surfaces lightly dry, reserving the marinade.
Heat 1 tablespoon butter and the olive oil in a over medium-high. Fry two cutlets at a time until browned at the edges and 145°F at the center, about 1 to 2 minutes per side; transfer to a plate and repeat with another tablespoon butter.
Pour reserved marinade into the skillet and boil vigorously for at least 3 minutes, scraping up the fond, until reduced and glossy. Swirl in remaining butter, return pork and accumulated juices, and turn for 30 seconds to coat.
Split and lightly toast the rolls. Touch the cut faces to the pan sauce, add one cutlet to each, and close. Serve immediately, with mustard and piri-piri offered separately rather than assumed as universal.
