Turkey club sandwich
A true triple-decker turkey club with thin crisp bacon, lettuce, tomato, mayonnaise, and three slices of toast.

Equipment
- A similarly sized 13 × 18-inch rimmed pan works; smaller pans make a thicker pizza.
Ingredients

- 12 slices thin-cut bacon
- 12 slices white or whole-wheat sandwich bread
- 1/2 cup mayonnaise
- 1 tablespoon Dijon mustard
- 1 pound thinly sliced roasted turkey breast
- 2 large ripe tomatoes, thinly sliced
- 1/2 teaspoon kosher salt
- 8 leaves iceberg or romaine lettuce, washed and dried
- Black pepper
Instructions
Bake bacon on a until crisp, 15 to 20 minutes; drain and break strips to fit the bread. Toast all 12 bread slices evenly and cool 2 minutes so steam escapes.
Mix mayonnaise with Dijon. Season tomato with salt and pepper, rest 5 minutes, and blot. Tear completely dry lettuce to fit.
For each lower tier, spread mayonnaise on toast, then add lettuce, half the turkey, and tomato. Spread both faces of a middle toast with mayonnaise and set it over the tomato.
Build the upper tier with lettuce, remaining turkey, and bacon. Spread mayonnaise on the final toast and close the sandwich.
Secure each club in four quadrants with picks, trim only if desired, and cut diagonally into four triangles with a serrated knife. Serve immediately.
