Avocado toast with poached eggs

Ingredients

  • 2 ripe Hass avocados
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon extra-virgin olive oil
  • 3/4 teaspoon kosher salt, divided
  • Black pepper
  • 4 thick slices seeded sourdough
  • 4 pasteurized large eggs
  • 1 tablespoon white vinegar
  • 2 tablespoons chopped flat-leaf parsley or chives
  • Aleppo pepper or chile flakes, for serving

Instructions

  1. Halve, pit, and scoop avocados into a bowl. Add lemon juice, olive oil, half the salt, and black pepper; crush with a fork into a rough spread with visible pieces.

  2. Toast sourdough deeply on both sides so the center remains chewy but the surface can resist moisture.

  3. Bring 2 inches water to a bare simmer and add vinegar. Crack each pasteurized egg through a for 10 seconds to shed loose white, then transfer to a small cup.

  4. Slide eggs into the water, keep it below a boil, and poach until whites are set and yolks remain soft, 3 to 4 minutes. Lift with a slotted spoon and blot underneath on a clean towel.

  5. Spread avocado edge-to-edge on hot toast, add eggs, and finish with remaining salt, herbs, chile, and black pepper. Serve immediately.
