  • A similarly sized 13 × 18-inch rimmed pan works; smaller pans make a thicker pizza.

Ingredients

  • 3 medium acorn squash, halved and seeded
  • 3 tablespoons sunflower oil, divided
  • 1 1/2 teaspoons kosher salt, divided
  • 1 large yellow onion, diced
  • 2 garlic cloves, minced
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • 1 1/2 cups cooked pinto or cranberry beans, drained
  • 1 1/2 cups cooked hominy, drained
  • 1 1/2 cups corn kernels
  • 1 cup low-sodium vegetable stock
  • 1/2 cup toasted pumpkin seeds
  • 1/4 cup chopped cilantro
  • 1 lime, cut into wedges

Instructions

  1. Heat oven to 425°F. Brush squash with 1 tablespoon oil, season with 1/2 teaspoon salt, and roast cut-side down on a until tender but holding shape, 30 to 40 minutes.

  2. Heat remaining oil and cook onion until golden. Add garlic, cumin, and coriander for 1 minute, then beans, hominy, corn, stock, and remaining salt. Simmer until cohesive but not dry, 8 minutes.

  3. Turn squash cut-side up and mound filling into the cavities. Bake 10 minutes until hot and lightly browned.

  4. Finish with pumpkin seeds and cilantro and serve with lime.
