Southwest quinoa bowls with black beans, charred corn and pepper, tomato, scallion, cilantro, avocado, pepitas, and lime vinaigrette.

Equipment

  • Any lidded pot of at least two quarts works; a very large pot loses heat faster.

Ingredients

  • 1 cup quinoa, rinsed thoroughly
  • 1 3/4 cups low-sodium vegetable broth
  • 1 teaspoon kosher salt, divided
  • 2 tablespoons olive oil, divided
  • 1 red bell pepper, diced
  • 1 1/2 cups corn kernels, thawed if frozen
  • 1 can (15 ounces) black beans, rinsed and drained
  • 2 cups cherry tomatoes, halved
  • 1 ripe avocado, diced
  • 4 scallions, thinly sliced
  • 1/2 cup cilantro leaves and tender stems, chopped
  • 2 limes
  • 1 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon honey or maple syrup
  • 1 small garlic clove, finely grated
  • 1/3 cup roasted salted pepitas
  • 2 ounces queso fresco, crumbled, optional

Instructions

  1. Combine quinoa, broth, and 1/2 teaspoon salt. , cover, reduce heat to low, and cook 15 minutes. Remove from heat, stand covered 10 minutes, then fluff and spread in a wide bowl to release steam.

  2. Heat 1 tablespoon olive oil in a skillet over high. Add bell pepper and corn and cook 5 to 7 minutes, stirring only occasionally, until charred in spots but still crisp. Fold into the warm quinoa with black beans.

  3. Whisk remaining olive oil, juice of both limes, cumin, paprika, honey, garlic, and remaining salt. Pour two-thirds over the warm quinoa mixture and toss so the grain absorbs flavor.

  4. Once the quinoa is warm rather than hot, fold in tomatoes, scallions, cilantro, and half the pepitas. Taste and add remaining vinaigrette as needed.

  5. Divide among bowls and top with avocado, remaining pepitas, and optional queso fresco. For meal prep, pack avocado and pepitas separately; the dressed quinoa-bean base keeps its texture better than dressed lettuce.
