  • 1 cup plain yellow cornmeal
  • 1 cup all-purpose flour, divided
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1 1/2 teaspoons kosher salt, divided
  • 2 large eggs, divided
  • 1 cup buttermilk
  • 8 tablespoons unsalted butter, divided
  • 4 slices firm white sandwich bread, cubed and dried
  • 1 large yellow onion, diced
  • 4 celery ribs, diced
  • 2 teaspoons rubbed sage
  • 1 teaspoon dried thyme
  • 1/2 teaspoon black pepper
  • 3 to 4 cups low-sodium chicken or turkey stock, divided
  • 2 tablespoons chopped flat-leaf parsley

Instructions

  1. At least 8 hours ahead, heat oven to 425°F with a inside. Whisk cornmeal, 1/2 cup flour, baking powder, baking soda, and 1/2 teaspoon salt. Whisk 1 egg with buttermilk and 2 tablespoons melted butter, then stir into dry ingredients just until combined.

  2. Melt 1 tablespoon butter in the hot skillet, add batter, and bake 18 to 22 minutes until browned and set. Cool, crumble onto a sheet pan with the bread cubes, and leave uncovered 8 hours or dry in a 250°F oven for 35 to 45 minutes. This advance drying is why the recipe is the batch's one holiday project.

  3. For the dressing, heat oven to 375°F and butter a 3-quart baking dish with 1 tablespoon butter. Melt remaining 4 tablespoons butter in a skillet; cook onion and celery 8 to 10 minutes until soft. Stir in sage, thyme, pepper, and remaining salt for 30 seconds.

  4. Combine dried cornbread, bread cubes, vegetables, and parsley. Whisk remaining egg with 3 cups stock, pour over, and fold gently. Add more stock until thoroughly moist and cohesive but not soupy; the exact amount depends on how dry the bread is.

  5. Spread in the dish without packing. Bake 35 to 45 minutes until the center reaches 165°F, edges are browned, and top is crisp. Rest 10 minutes before serving. Dressing is baked separately; do not put this mixture inside a turkey.
