Skillet shepherd’s pie
A cast-iron shepherd’s pie with deeply browned lamb, reduced herb gravy, carrots and peas beneath buttery ridged mashed potatoes broiled until crisp.

Ingredients

- 2 pounds Yukon Gold potatoes, peeled and cut into chunks
- 2 teaspoons kosher salt, divided
- 4 tablespoons unsalted butter, divided
- 1/2 cup whole milk, warmed
- 1 large egg yolk
- 1 tablespoon neutral oil
- 1 1/2 pounds ground lamb
- 1 large yellow onion, finely diced
- 2 carrots, cut into 1/4-inch dice
- 3 garlic cloves, minced
- 2 tablespoons tomato paste
- 2 tablespoons all-purpose flour
- 1 cup dry red wine
- 1 1/2 cups low-sodium lamb or beef stock
- 1 tablespoon Worcestershire sauce
- 1 teaspoon fresh thyme leaves
- 1 cup frozen peas
- 1/2 teaspoon black pepper
Instructions
Boil potatoes in water seasoned with 1 teaspoon salt until completely tender. Drain and return to the hot pot 2 minutes to steam dry. Mash with 3 tablespoons butter, warm milk, egg yolk, and 1/2 teaspoon salt; keep warm.
Heat oil in a . Brown lamb deeply, breaking it into coarse pieces; spoon off all but 1 tablespoon fat. Add onion and carrots and cook 8 minutes, then garlic and tomato paste for 2 minutes.
Stir in flour for 1 minute. Add wine and reduce by half, then stock, Worcestershire, thyme, pepper, and remaining salt. Simmer until gravy is thick and leaves a trail, 8 to 10 minutes. Fold in peas and level the filling.
Spoon potatoes over filling and spread completely to the skillet edge to seal. Ridge with a fork and dot with remaining butter. Bake at 425°F for 20 minutes, then broil until browned. Rest 10 minutes.
