Pork souvlaki pita
Charred Greek pork souvlaki skewers rested over onion and lemon, then wrapped in warm pita with thick tzatziki, tomato, and fresh onion.

Ingredients

- 2 pounds boneless pork shoulder or pork neck, cut into 1-inch cubes
- 1/3 cup extra-virgin olive oil, divided
- 3 tablespoons fresh lemon juice, divided
- 1 tablespoon red-wine vinegar, plus 2 teaspoons for the sauce
- 2 teaspoons dried Greek oregano, divided
- 1 teaspoon honey
- 2 teaspoons kosher salt, divided
- 1/2 teaspoon black pepper
- 1 English cucumber, coarsely grated
- 1 1/2 cups full-fat Greek yogurt
- 2 garlic cloves, finely grated
- 2 tablespoons chopped fresh dill
- 1 small red onion, thinly sliced
- 2 ripe tomatoes, thinly sliced
- 6 thick Greek-style pita breads
Instructions
Mix pork with 1/4 cup olive oil, 2 tablespoons lemon juice, 1 tablespoon vinegar, 1 teaspoon oregano, honey, 1 teaspoon salt, and pepper. Refrigerate 20 to 60 minutes; a longer acidic soak can make the exterior mealy.
Salt cucumber with 1/2 teaspoon salt and stand 10 minutes. Squeeze completely dry, then mix with yogurt, garlic, dill, 2 teaspoons vinegar, and 1 tablespoon olive oil. Chill.
Thread pork onto with small gaps. Grill over high heat, turning every 2 minutes, until deeply browned and the centers reach 145°F, 8 to 12 minutes.
Put half the sliced onion on a platter. Lay skewers over it, drizzle with remaining lemon juice, and rest 5 minutes before sliding off the pork.
Brush pitas with remaining olive oil, sprinkle with remaining oregano, and warm on the grill. Fill with tzatziki, pork, tomato, remaining raw onion, and remaining salt.
