Canadian maple-glazed salmon with a thin amber sheen, moist coral flakes, lemon, and lightly caramelized edges.

  • A similarly sized 13 × 18-inch rimmed pan works; smaller pans make a thicker pizza.

Ingredients

  • 6 skin-on center-cut salmon fillets, 6 ounces each
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1/3 cup pure maple syrup
  • 2 tablespoons Dijon mustard
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon low-sodium soy sauce
  • 1 garlic clove, grated
  • 1 tablespoon neutral oil
  • 1 lemon, cut into wedges

Instructions

  1. Pat salmon dry and season with salt and pepper. Whisk maple syrup, Dijon, vinegar, soy sauce, and garlic. Reserve half in a clean saucepan; marinate salmon in the remainder for 20 minutes only.

  2. Heat oven to 450°F with a inside. Brush the hot pan with oil, remove salmon from marinade, and set it skin-side down; discard used marinade.

  3. Roast 7 minutes. Simmer the reserved clean glaze 2 minutes, brush a thin layer over salmon, and roast 4 to 7 minutes more until the thickest part reaches 145°F.

  4. Rest 3 minutes, brush with a final light coat of glaze, and serve with lemon.
