Loco moco
Hilo-style local comfort food: hot Calrose rice, a deeply browned beef patty, savory onion-mushroom gravy, and a freshly fried egg stacked in that order.

Equipment
- Preheat a 9-inch metal cake pan; the crust will be lighter but still valid.
Ingredients

- 2 cups Calrose rice, rinsed
- 2 1/2 cups water
- 1 1/4 pounds 80%-lean ground beef
- 1 small yellow onion, finely diced and divided
- 1/3 cup panko breadcrumbs
- 1 tablespoon soy sauce, divided
- 1 teaspoon kosher salt, divided
- 1/2 teaspoon black pepper, divided
- 1 tablespoon neutral oil
- 8 ounces cremini mushrooms, sliced
- 2 tablespoons unsalted butter
- 2 tablespoons all-purpose flour
- 2 cups low-sodium beef stock, hot
- 1 teaspoon Worcestershire sauce
- 4 pasteurized large eggs
- 2 scallions, thinly sliced
Instructions
Combine rice and water, bring to a simmer, cover, and cook on low 15 minutes; rest covered 10 minutes. Mix beef with half the onion, panko, 2 teaspoons soy sauce, 1/2 teaspoon salt, and 1/4 teaspoon pepper. Form four wide patties with shallow center dimples.
Heat oil in over medium-high. Brown patties 4 to 5 minutes per side until they reach 160°F. Rest on a plate. Brown mushrooms in the drippings, add remaining onion, and cook until soft.
Add butter and flour and stir 2 minutes. Gradually whisk in hot stock, Worcestershire, remaining soy sauce, salt, and pepper. Simmer until glossy and spoon-coating, returning patties and their juices for the final 2 minutes.
In a nonstick skillet fry pasteurized eggs until whites are fully set and yolks remain soft, or cook yolks firm for higher-risk diners. Divide hot rice among plates, top each with a patty, ladle over gravy, add an egg, and finish with scallions.
