Loaded sheet-pan nachos
Crisp tortilla chips covered edge-to-edge with seasoned beef, black beans, melted cheese, jalapeños, and cool fresh toppings.

Ingredients

- 1 tablespoon neutral oil
- 1 pound lean ground beef
- 2 teaspoons chili powder
- 1 teaspoon ground cumin
- 1/2 teaspoon garlic powder
- 3/4 teaspoon kosher salt, divided
- 1 can (15 ounces) black beans, rinsed and drained well
- 12 ounces sturdy restaurant-style tortilla chips
- 12 ounces Monterey Jack or cheddar, freshly grated
- 1/3 cup drained pickled jalapeño slices
- 1 medium Roma tomato, seeded and diced
- 3 scallions, thinly sliced
- 1/2 cup sour cream
- 1/2 cup salsa, for serving
- 1 lime, cut in wedges
Instructions
Heat oven to 425°F. Heat oil in a skillet over medium-high. Add beef, chili powder, cumin, garlic powder, and 1/2 teaspoon salt; cook 6 to 8 minutes, breaking it into small crumbles, until browned and 160°F. Drain excess fat, then fold in the dry beans.
Spread chips in one slightly overlapping layer on a , discarding broken crumbs. Scatter half the cheese across the chips, then distribute the beef-bean mixture in small spoonfuls all the way to the edges.
Top with remaining cheese and pickled jalapeños. Bake 6 to 8 minutes until the cheese is fully melted and the exposed chip edges remain crisp; rotate once if the oven browns unevenly.
Immediately scatter tomato and scallions over the hot nachos and season with remaining salt. Dollop sour cream lightly or serve it alongside rather than blanketing and softening the chips.
Serve from the pan at once with salsa and lime wedges. Nachos deteriorate as they sit, so cook the beef ahead if useful but assemble and bake only when people are ready to eat.
