Jamaican jerk chicken wraps with smoky dark-edged sliced chicken and a restrained lime cabbage-carrot slaw.

Equipment

  • Any sound outdoor grill works; a hot cast-iron skillet is the indoor fallback.

Ingredients

  • 2 pounds boneless skinless chicken thighs
  • 1 bunch scallions, coarsely chopped
  • 4 garlic cloves
  • 1 Scotch bonnet chile, stemmed
  • 1 tablespoon fresh thyme leaves
  • 1 tablespoon whole allspice berries, toasted and ground
  • 1 teaspoon ground ginger
  • 1/2 teaspoon ground nutmeg
  • 2 tablespoons dark brown sugar
  • 2 tablespoons soy sauce
  • 2 tablespoons fresh lime juice, divided
  • 1 tablespoon white vinegar
  • 1 tablespoon neutral oil
  • 1 1/2 teaspoons kosher salt, divided
  • 3 cups finely shredded green cabbage
  • 1 medium carrot, grated
  • 2 tablespoons mayonnaise
  • 6 large soft flour flatbreads or wraps

Instructions

  1. Blend scallions, garlic, Scotch bonnet, thyme, allspice, ginger, nutmeg, brown sugar, soy sauce, 1 tablespoon lime juice, vinegar, oil, and 1 teaspoon salt into a coarse paste. Wear gloves around the chile and avoid touching eyes. Coat chicken and refrigerate 8 to 24 hours.

  2. Set a charcoal grill for ; add a small piece of pimento wood if legally and practically available, otherwise rely on charcoal without claiming an exact substitute. Wipe excess marinade from chicken and grill mostly over indirect heat, covered, turning and moving over direct heat near the end for dark crusty edges, until 165°F, 20 to 25 minutes.

  3. Rest chicken 8 minutes, then slice across the grain. Toss cabbage and carrot with mayonnaise, remaining lime juice, and remaining salt just before assembly.

  4. Warm flatbreads briefly on the grill. Divide chicken and a restrained line of slaw among them, fold in the sides, and roll tightly. Serve immediately so the smoky crust remains distinct.
