Hot spinach artichoke dip
A bubbling, scoopable dip packed with spinach and artichokes under a browned mozzarella-Parmesan top.

Ingredients

- 1 package (10 ounces) frozen chopped spinach, thawed
- 1 can (14 ounces) artichoke hearts in water, drained
- 8 ounces cream cheese, softened
- 1/2 cup sour cream
- 1/4 cup mayonnaise
- 3 garlic cloves, finely grated
- 1 teaspoon fresh lemon juice
- 1/4 teaspoon red pepper flakes
- 1/2 teaspoon kosher salt
- 1/4 teaspoon black pepper
- 6 ounces low-moisture mozzarella, freshly grated, divided
- 2 ounces Parmesan, finely grated, divided
- Tortilla chips, toasted baguette slices, or crisp vegetables, for serving
Instructions
Heat oven to 375°F. Squeeze spinach in a clean towel until no more water drips. Press artichokes dry, then chop into 1/2-inch pieces; watery vegetables are the main enemy of a scoopable dip.
Beat cream cheese, sour cream, mayonnaise, garlic, lemon, pepper flakes, salt, and pepper until smooth. Fold in spinach, artichokes, two-thirds of the mozzarella, and two-thirds of the Parmesan.
Spread in a and top with remaining cheeses. Bake 20 to 25 minutes until bubbling at the edges and at least 165°F in the center.
Broil 1 to 2 minutes only if the top needs more color, watching continuously. Rest 5 minutes so the molten cheese settles into a dip rather than running from the serving chip.
Serve hot with sturdy dippers. Refrigerate within two hours, and reheat leftovers gently until steaming rather than repeatedly holding the dairy dip warm.
