Dill chicken with beet barley
Dill chicken with beet barley brings together lemon-dill chicken, ruby beets, barley, kale, and yogurt in a colorful, weeknight-ready dinner.

- 1 1/2 pounds chicken breast cutlets
- 1 1/2 cups quick-cooking barley
- 1 pound cooked beets, cut into wedges
- 5 ounces baby kale
- 1/2 cup plain Greek yogurt
- 2 tablespoons lemon juice
- 1/2 cup fresh dill, chopped
- 1/3 cup toasted sunflower seeds
- 2 tablespoons olive oil, divided
- 1 teaspoon kosher salt, divided, plus black pepper
Instructions
Cook 1 1/2 cups quick-cooking barley according to package directions. Keep warm, fluffing or separating it before serving. Combine 1/2 cup plain Greek yogurt, 2 tablespoons lemon juice, 1/2 cup fresh dill, chopped into a smooth dressing or glaze.
Pat 1 1/2 pounds chicken breast cutlets dry, then season with half of 1 teaspoon kosher salt and black pepper. Heat 1 tablespoon olive oil in a large skillet over medium-high and cook the main ingredient until it reaches 165°F; transfer to a plate.
Add the remaining 1 tablespoon olive oil and . Cook until browned or crisp-tender, 4 to 6 minutes, then season with the remaining salt and pepper.
Build four bowls with the prepared base, cooked vegetables, and main ingredient. Add 1 pound cooked beets, cut into wedges and 5 ounces baby kale fresh at serving. Spoon over the sauce and finish Dill chicken with beet barley with 1/3 cup toasted sunflower seeds.
