Creamy Dijon chicken
Golden chicken cutlets in a one-pan shallot, white-wine, Dijon, cream, and fresh-tarragon sauce, ready in about 40 minutes.

- 2 large boneless skinless chicken breasts, about 1 1/2 pounds total
- 1 teaspoon kosher salt
- 1/2 teaspoon black pepper
- 1/4 cup all-purpose flour
- 1 tablespoon extra-virgin olive oil
- 2 tablespoons unsalted butter, divided
- 1 medium shallot, finely chopped
- 2 garlic cloves, minced
- 1/2 cup dry white wine
- 3/4 cup low-sodium chicken stock
- 2 tablespoons Dijon mustard
- 1 tablespoon whole-grain mustard
- 1/2 cup heavy cream
- 2 tablespoons chopped fresh tarragon
- 1 tablespoon fresh lemon juice
Instructions
Slice each chicken breast horizontally into two even cutlets. Pat dry, season with salt and pepper, and dust lightly with flour, shaking off every loose patch.
Heat olive oil and 1 tablespoon butter in a over medium-high. Brown cutlets without crowding, about 3 minutes per side, and transfer each one as it reaches 165°F.
Lower heat to medium. Add shallot and cook 2 minutes, then garlic for 30 seconds. Pour in wine, scrape up the fond, and reduce by about half so no raw alcohol edge remains.
Whisk in stock, Dijon, and whole-grain mustard; simmer 3 to 4 minutes. Stir in cream and cook gently until the sauce lightly coats a spoon—do not boil hard or reduce it into paste.
Return chicken and its juices just long enough to warm through. Remove from heat, swirl in remaining butter, tarragon, and lemon juice, and spoon the balanced sauce over the cutlets.
