  • 1 1/4 pounds boneless skinless chicken breasts, pounded 3/4 inch thick
  • 1 teaspoon kosher salt, divided
  • 1/2 teaspoon black pepper, divided
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1 tablespoon olive oil
  • 1/3 cup mayonnaise
  • 1/3 cup buttermilk
  • 1/4 cup plain Greek yogurt
  • 1 tablespoon fresh lemon juice
  • 2 tablespoons chopped dill
  • 2 tablespoons chopped chives
  • 1 small garlic clove, finely grated
  • 1 small head romaine, chopped and thoroughly dried
  • 3 cups thinly sliced green cabbage
  • 1 cup corn kernels, thawed if frozen
  • 1 English cucumber, diced
  • 2 cups cherry tomatoes, halved
  • 3 ounces sharp cheddar, grated
  • 1/3 cup roasted salted pepitas

Instructions

  1. Season chicken with 3/4 teaspoon salt, 1/4 teaspoon pepper, garlic powder, and paprika. Heat olive oil in a and cook chicken 5 to 7 minutes per side until 165°F. Rest 10 minutes, then dice.

  2. Whisk mayonnaise, buttermilk, yogurt, lemon, dill, chives, grated garlic, remaining salt, and remaining pepper until pourable and evenly flecked. Taste for a cool, tangy herb balance.

  3. Combine romaine, cabbage, corn, cucumber, and tomatoes in a very large bowl. Add chicken, cheddar, and two-thirds of the pepitas.

  4. Add only enough ranch to coat and toss thoroughly from the bottom so the chopped ingredients distribute evenly. Taste before adding more salt because cheddar and pepitas are seasoned.

  5. Divide among bowls, top with remaining pepitas, and serve extra ranch alongside. For meal prep, store chicken, ranch, pepitas, and chopped vegetables separately and combine when eating.
