Ingredients

  • 2 cups all-purpose flour, plus more for rolling
  • 1 teaspoon kosher salt, divided
  • 14 tablespoons cold unsalted butter, cubed and divided
  • 6 tablespoons ice water
  • 2 pounds boneless skinless chicken thighs
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1 large yellow onion, diced
  • 3 carrots, cut into 1/2-inch pieces
  • 2 celery stalks, cut into 1/2-inch pieces
  • 1/3 cup all-purpose flour
  • 3 cups low-sodium chicken stock, warmed
  • 1/2 cup heavy cream
  • 1 teaspoon fresh thyme leaves
  • 1/2 teaspoon dried sage
  • 1 cup frozen peas
  • 2 tablespoons chopped flat-leaf parsley
  • 1 large egg
  • 1 tablespoon water

Instructions

  1. Pulse 2 cups flour with 1/2 teaspoon salt. Cut in 10 tablespoons cold butter until pea-size pieces remain; add ice water just until dough holds. Form a disk, wrap, and chill 1 hour.

  2. Season chicken with 1/4 teaspoon salt and pepper. Sear in olive oil over medium-high until browned and 165°F, 5 to 7 minutes per side. Rest 10 minutes and cut into bite-size pieces.

  3. Melt remaining butter in a . Cook onion, carrots, and celery until tender, 10 minutes. Stir in 1/3 cup flour for 2 minutes. Gradually add stock, then cream, thyme, sage, and remaining salt; simmer until thick enough to leave a trail. Fold in chicken, peas, and parsley, then cool 20 minutes.

  4. Roll dough 1 inch wider than the skillet. Lay over cooled filling, trim and crimp, and cut five vents. Beat egg with 1 tablespoon water and brush over crust. Bake at 400°F until deeply golden and bubbling through vents, 30 to 40 minutes. Rest 20 minutes before serving.
