Chicken piccata
Thin golden chicken cutlets in a bright, glossy lemon-caper pan sauce balanced with wine, stock, butter, and parsley.

Ingredients

- 1 1/2 pounds boneless skinless chicken breasts, sliced horizontally into 4 cutlets
- 1 teaspoon kosher salt
- 1/2 teaspoon black pepper
- 1/2 cup all-purpose flour
- 2 tablespoons extra-virgin olive oil
- 5 tablespoons unsalted butter, divided and chilled
- 1/3 cup dry white wine
- 3/4 cup low-sodium chicken stock
- 3 tablespoons fresh lemon juice
- 2 tablespoons brined capers, rinsed and drained
- 1/4 cup chopped flat-leaf parsley
Instructions
Pound cutlets between sheets of parchment to an even 1/4 inch. Season with salt and pepper, then dust lightly with flour and shake off every loose patch.
Heat oil and 1 tablespoon butter in a over medium-high. Sauté cutlets without crowding until golden and the center reaches 165°F, 2 to 3 minutes per side. Transfer to a warm plate for 5 minutes.
Lower heat to medium. Add wine, scrape up the fond, and reduce by two-thirds. Add stock and capers and simmer until reduced to about 2/3 cup, 4 to 6 minutes.
Remove from heat and whisk in lemon juice, then the remaining 4 tablespoons cold butter one piece at a time until glossy. Fold in parsley, taste for salt and acidity, and spoon over—not undercook—the rested chicken.
