Chicken larb lettuce cups
Warm minced chicken dressed off heat with lime, fish sauce, smoky chile, mint, and coarse toasted-rice powder, with crisp lettuce for wrapping.

Ingredients

- 2 tablespoons uncooked jasmine or glutinous rice
- 1 small makrut lime leaf, optional
- 1/3 cup water
- 1 pound ground chicken
- 3 tablespoons fish sauce, divided
- 3 tablespoons fresh lime juice
- 1 to 2 teaspoons Thai roasted chile flakes
- 2 medium shallots, thinly sliced
- 3 scallions, thinly sliced
- 1/2 packed cup cilantro leaves and tender stems, chopped
- 1/2 packed cup mint leaves, torn
- 16 butter-lettuce leaves, washed and completely dried
- 1 small cucumber, thinly sliced
Instructions
Toast rice and the optional makrut lime leaf in a dry skillet over medium-high, stirring constantly, until deeply brown and nutty, 6 to 8 minutes. Cool, then grind to a coarse powder rather than flour.
Bring 1/3 cup water to a simmer in a . Add chicken and 1 teaspoon fish sauce; cook over medium, stirring to separate the meat without browning it, until no pink remains and it reaches 165°F, 5 to 7 minutes.
Remove skillet from heat. Immediately fold in remaining fish sauce, lime juice, chile flakes, toasted-rice powder, and shallots; let the residual heat soften the shallots for 1 minute.
Fold in scallions and cilantro. Taste for an assertive salty-sour balance, then scatter mint over the warm larb so it stays green.
Serve larb warm or at room temperature with dry lettuce and cucumber. Spoon a small amount into each leaf immediately before eating rather than preassembling the cups.
