Cast-iron steak with herb butter

  • Preheat a 9-inch metal cake pan; the crust will be lighter but still valid.

Ingredients

  • 2 boneless rib-eye steaks, each 1 1/2 inches thick and about 14 ounces
  • 2 teaspoons kosher salt
  • 1 teaspoon black pepper
  • 1 tablespoon neutral oil
  • 5 tablespoons unsalted butter, softened and divided
  • 1 tablespoon chopped flat-leaf parsley
  • 1 tablespoon thinly sliced chives
  • 1 teaspoon fresh lemon zest
  • 2 garlic cloves, smashed
  • 2 fresh rosemary sprigs
  • 4 fresh thyme sprigs

Instructions

  1. Pat steaks dry, season all over with salt, and refrigerate uncovered on a rack 8 to 24 hours. Mix 3 tablespoons butter with parsley, chives, and lemon zest; shape into a small log and chill.

  2. Remove steaks 20 minutes before cooking and pat dry again. Heat a over medium-high until faintly smoking, add oil, season steaks with pepper, and sear without moving until a dark crust forms, 2 to 3 minutes per side. Sear fat caps with tongs.

  3. Lower heat to medium. Add remaining butter, garlic, rosemary, and thyme. Tilt the pan and baste steaks continuously, flipping every 30 seconds, until the centers reach 125°F to 130°F for medium-rare or 135°F to 140°F for medium.

  4. Transfer to a rack and top with sliced herb butter. Rest 8 to 10 minutes, then slice across the grain. For households following USDA guidance, continue cooking to 145°F and rest at least 3 minutes.
