Equipment

  • If you already have an 8-inch skillet, use it; the omelet will simply have softer edges.

Ingredients

  • 1 can (14 ounces) British-style baked beans in tomato sauce
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon unsalted butter, plus more for toast
  • 4 thick slices white or wholemeal bread
  • 1 teaspoon neutral oil
  • 2 pasteurized large eggs
  • Black pepper

Instructions

  1. Warm beans with Worcestershire over medium-low, stirring, until steaming and slightly thickened, 5 to 7 minutes. Do not boil the sauce away.

  2. Toast bread deeply enough to resist the sauce and butter it while hot.

  3. Heat neutral oil in a over medium-high. Fry pasteurized eggs until whites set with crisp edges and yolks remain soft.

  4. Divide toast between warm plates, spoon beans over the center while leaving some crust exposed, and add an egg to each.

  5. Finish with black pepper and serve immediately.
